Steve and I went to a local farmer's market last weekend. There were ladies giving away samples; I never pass on a free sample. It was delicious. We asked what it was and the lady replied in a thick southern accent "It's tomato pie." I have never heard of tomato pie before. We inquired how much it would cost for us to bring this delicious dish home with us - a whopping $19!
I'm not apposed to people making a profit but $19 for a 9-inch pie is pushing it. We left without the pie and my thoughts of googling it and making one myself. Well after some research and finding that Tomato Pie is a very southern dish, I was a little skeptical as to whether I wanted to cook something with the main ingredients being tomato, mayonnaise, and cheese. But the memory of the wonderful dish pushed me on.
After peeling the tomatoes (actually learning how to peel a tomato correctly), layering them with herbs in a pie crust (pre-made), covering the whole thing with a cheese and mayo concoction, and baking for 30 minutes... Voilà tomato pie...it was wonderful and just as good as that $19 pie and easily 1/2 the price...triumph!
